Healthy and Delicious Fall Recipes for Students

The warm summer air is about to say goodbye to us all and fall will take its place. September 22nd marks the first day of fall. Are you ready? It’s only a few days away!

Fall is full of fun activities to do for just about everyone. College football games, apple and pumpkin patches, halloween parties, you name it. But not only are there fun things to do but also fun and healthy things to cook.

Being a college student can be hard when it comes to making your own meals. Especially when most students don’t have a lot of money or time. I have provided a list below of a few different recipes for you to try out that are cheap and easy to make.

Healthy Grilled Cheese Sandwich
Who doesn’t love a nice warm grilled cheese sandwich when its cold out?
 

 

 

 

 

 

 

Ingredients:

  • Whole Wheat Bread
  • Your favorite Cheese
  •  Tomatoes,Onions,Spinach,Garlic (chopped)
  • Salt and Pepper
  • Butter

Directions:

  1. Heat up a pan over medium heat or a panini press
  2. Layer one slice of bread with a layer of butter and lay flat on the pan.
  3. Place 1 or 2 slices of cheese onto the bread
  4. Top the cheese with a layer of the chopped veggies,salt,pepper and place last piece of bread on top
  5. Grill on both sides until crispy and the cheese is melted.

Serve with a cup of soup or just a side of ketchup!

Fluffy and Light Pumpkin Pancakes

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1 1/4 cups all purpose flour
  • 2 Tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/4 cup low-fat milk
  • 1/3 cup canned pumpkin puree
  • 2 Tbsp melted butter
  • 1 egg

Directions:

  1. Whisk flour, sugar, baking powder, spices and salt in a bowl
  2. In a separate bowl, whisk milk, pumpkin puree, melted butter and egg
  3. Fold mixture into dry ingredients
  4. Spray or grease a skillet over medium heat and pour 1/4 cup of batter for each pancake
  5. Cook pancakes about 3 minutes per side.

Makes about 6 six-inch pancakes.

Cranberry and Apple Crumble
Serves 6 to 8

 

 

 

 

 

 

 

 

 

 

 

Ingredients:

  • 1/2 cup flour
  • 1/4 cup sugar + 2 tbsp more sugar
  • 1/4 cup brown sugar
  • 1/4 cup chilled butter cut into small pieces
  • 6 cups peeled and sliced (about 1/2 inch thick) apples such as granny smith or braeburn
  • 1 cup fresh or frozen cranberries
  • 1/3 cup orange juice
  • 1 tbsp cornstarch

Directions:

  1. Heat oven to 375. Combine flour, 1/4 cup sugar, brown sugar, and butter in a mixing bowl. Mix with your fingers to create pea-sized crumbs.
  2. Combine apple slices and cranberries in large bowl. Mix the juice and remaining 2 tbsp of sugar and cornstarch in small bowl. Pour mixture into fruit and toss well.
  3. Spoon the fruit into a 2 quart baking dish and sprinkle on the flour mixture.
  4. Bake the crumble until bubbly and golden brown. About 40 minutes.

Try with a scoop of vanilla ice cream!
